Thin Mint muddy Buddies

No joke, I made this recipe up myself! I was experimenting with the new fave cake batter muddy buddies and thought about how I needed to track down a wal mart to get my fair share of girl scout cookies this season. I looked up this recipe to see if anybody else had tried to make them and all the recipes I had found used actual Thin Mints.... So in reality these muddy buddies were an every March thing.

Here is my year round new favorite recipe!

6 cups rice chex

1/2 bag andes mints crushed

1/2 bag milk chocolate chips

1 cup chocolate cake mix

1/2 cup powdered sugar

Melt the chocolate and pour over the chex. mix carefully then add the cake mix and powdered sugar then mix all together.

you get the crunch from the chex, the minty and chocolate that taste exactly like a thin mint cookie..... and its so so so good!

The best chicken enchiladas

This week Jase is in Kansas. I decided I would come to Utah cause I missed my family and I couldn't work anyway so why not come on down. I haven't seen my Best Friend Jessica in so long, so I packed up Kendyl and headed to her house. We decided we wanted to make some chicken enchiladas. Her mom makes so good ones but they are too spicy for Jess. :) So she kinda just made up this recipe. We were so nervous to eat it, but it was so good I want to make them again this week!
Here is the recipe!
SAUCE:
1 jar Alfredo sauce
2 cans green chili sauce
1 can cream of chicken soup
couple dashes of crushed red pepper
1 jalapeno chopped up

Boil your chicken and shred
coat the bottom of your pan with the "sauce"
spread chicken, sauce and some cheese in each tortilla
wrap up and place in pan. Pretty simple, so do i really need to explain it? When finished filling up your pan with enchiladas pour remaining sauce ALL over the top. It will look pretty soupy but this is good. Top with Cheese. (we used some cheddar and some mozzarella) Put in the oven at 350 for 30 min. Let cool and serve.

Thanks for letting me eat these Melba!

Chicken pot pie!

Ok so this recipe is Super Easy and SO super yummy. Seriously Pot pie is my comfort food. Anyway so try this cause its so easy and so good and you can have leftovers!
Ingredients
  • Bag of Frozen Vegetables. (I get the one with brocoli, cauliflower, carrots... but whatever fits your fancy)
  • 1 Chicken breast cooked then chopped or cubed (seriously if u want to make it easier and faster just put in a can of chicken.
  • Pie crust (either make your own or buy the pre made kind from the store.)
  • 1 normal size can cream of chicken soup (I use cream of celery or mushroom... doesn't matter)

Optional

  • any other vegetables u would like. I usually add a few mushrooms.

combine vegetables (still frozen), cooked chicken and can of soup in a bowl and mix together. Add whatever seasons you would like. I usually put in garlic salt and powder, pepper and season salt.... other put in chicken rub, really its your preference. Line your round pie pan with the bottom crust, Fill with your mixture, then put the top crust on top. Pinch the edges all fancy and then cut out a design out of the top. Anything you want. I have done the letter "T" and last night I made a flower. Bake at 400 for 45-50 minutes. Let stand for about 5-10 minutes before serving! mmm mmm mmm! Love this recipe!

Best breadsticks

So i was going to have an Eat Pray Love date night with Jase since we were getting that movie in the mail from netflix saturday night. So I put on my apron and made us an Italian Meal... spaghetti and these SO yummy and SO tasty and SO EASY breadsticks! (ps this was my first time making anything bread besides banana bread!)

So here is the recipe cause I think I should share!

Ingredients:

3 1/2 cups all purpose flour

1/2 tsp salt

2 TBSP sugar

1 scant tbsp (or 1 package) quick rise yeast (i just had normal yeast and it worked just fine)

1/2 cups warm water

1 stick butter

(to put on top when finished) garlic salt and parmesan cheese (fresh)

So i mixed all the dry ingredients together in my kitchen aid then added in the warm water. Make sure you have your dough hook on for this! I kneaded it in my machine for about 10 minutes. I let it rest for a few minutes then rolled it out. Roll it to about the size of a jelly roll pan. Melt the butter and pour about half into the bottom of the pan spreading it all over. Put the dough on the pan and roll until the edges meet. Then with a brush i brished the rest of the butter all over the top. sprinkled on some Garlic salt and parmesan cheese. I then cut them to the size I wanted with a pizza cutter. i covered them with saran wrap and let them sit for about an hour. (could have been less but i ran to the store to get some milk and it was packed so it took about an hour) I let the oven heat up to 375 and cooked them for about 13 1/2 minutes. But depending on your likeness and your oven it can be anywhere from 12 to 15 minutes.

seriously these are DIVINE!

Baking Season is upon Me

Some Would say I like to Bake.... Some would say I hate it too!
But whatever you hear, I'm starting to become famous for my Tie Dye cakes.
Do I hate baking them...not really. Do i hate cleaning up the Mess....YES.
But I do however love the outcome of my finished project.
So bring on Feb. Birthdays cause I am ready to Roll!

So I saw this cake on the Internet and thought WOW!... I wanna learn! It was SO easy its not even funny. (I have pictures of my cakes somewhere but I honestly can't find them so i borrowed this off of google images) Anyway Its simply cake mix, food coloring and some mixing. Easy as that! I will get into more detail if u want it.

And secondly, I'm loving these puppies lately! I call them the Cake mix cookies. I got the Idea from Jase's mom and decided I wanted to try ALL cake mixes. So far I have just made them with spice cake only cause my bootylicious is getting to bootyish! (if u know what I mean)
All you do is:
  • Get a box of your favorite cake mix. (p.s Idaho shame on you for NOT having red velvet cake mix.... seriously who doesn't sell this!?)
  • Mix 2 eggs
  • 1/3 cup of oil

Mix this all up and roll into little balls.... Bake at 375 for 6-8 minutes or until edges are light golden brown.

Seriously These are the easiest and best cookies. I'm So excited for Valentines Day. Iget to eat yummy cookies and the next day is Jase's Birthday and that means CAKE! Yes I am a fat girl trapped inside a semi smaller body.
